4 to 8 oz. fresh, ready to cook black-eyed peas
1 medium jalapeno pepper (chopped)
1/2 small onion (chopped)
2 or 3 bacon slices (cut up)
salt & pepper to taste
water as needed
Combine peas, pepper, onion and bacon in a 2 quart sauce pan.
Add water to fill the pan.
Add salt & pepper as you like.
Bring to a boil.
Lower heat and simmer (at a low boil) until liquid is absorbed and peas are tender.
If peas are still hard add more water as needed and continue cooking until peas are tender.
Note: Recipe can be easily doubled, tripled or more!
