1 pound ground chuck
1 large yellow onion (chopped)
3 pieces of green onions
1 large bell pepper (chopped)
1/4 cup of Italian breadcrumbs
1 cup of salsa
2 large eggs
1 tablespoon oil
Combine all ingredients together in a large bowl.
Mix well, but not too much because the meatloaf will be overworked.
Place all ingredients in a loaf pan and bake on 375 F until done.
Pour off grease and top with additional salsa.
Bake for about 10 minutes.
Note: I use ground chuck because it is lean, but I’ve also tried it with ground turkey and my family loved it just the same.
