Oven-Barbecued Baby Beef Ribs

Ingredients: 2 lbs. baby beef ribs 4 chopped green onions 2 teaspoons butter 1 teaspoon all-purpose flour 1 teaspoon Dijon mustard 1 cup beef broth 2 teaspoons lemon juice 3 teaspoons chili sauce freshly ground black pepper to taste Instructions: Wash ribs and wipe with a damp paper towel. Place in single layer in shallow roasting pan. Roast at 450 degrees for 20 to 30 minutes. Drain fat. To prepare sauce – sauté onion in butter until tender. Stir in flour and mustard. Cook 1 to 2 minutes. Stir in beef broth, lemon juice, chili sauce and black pepper. Cook 5 to 7 minutes or until sauce is smooth and thick. Brush over ribs, return to oven and bake 30 minutes or until tender, basting occasionally with sauce.

Steak Casserole

Ingredients: 2 pounds round steak (cubed) 1 can chicken & rice soup 1 can cream of mushroom soup 3 tablespoons soy sauce 1 can evaporated milk Equipment: Frying pan Medium-sized casserole dish Large bowl Measuring spoons Instructions: Preheat oven to 350 degrees F. Roll steak in flour. Brown steak in the frying pan. Place the steak aside to drain the excess grease. Mix the remaining ingredients in a large bowl. Place the steak in the greased casserole dish. Pour the ingredients from the bowl over the steak. Cover the dish with foil. Place the dish in the oven for 1 ½ to 2 hours. (Remove the foil the last 15 minutes.) Serve over a bed of rice.

PNinety’s Meatloaf

Ingredients: 2 pounds ground beef 1 large onion 1 bell pepper 3 eggs 1 large can carnation milk 18 oz ketchup black pepper corn flakes (1 handful) Instructions: Preheat oven 350 degrees F. Put beef in a bowl. Cut up onion and bell pepper, then add to beef. Add eggs and 3/4 of ketchup and black pepper to taste. Crush a handful of cornflakes, add and mix well. Then add milk, mix and shape into a loaf in a pan. Bake until done, approximately 1 hour 20 minutes. Spread the remainder of the ketchup on top of the meatloaf. Bake another 10-15 minutes.

Slap Yo Momma’ Meatloaf

https://www.youtube.com/watch?v=WI3Ay1gNtlM Ingredients: 1 Family pack ground beef, 5 pounds or greater 1/2 large onion, chopped 1 bell pepper, large, chopped 4oz of evaporated milk, about 4oz 2 large eggs 1 1/2 packages of crackers 5oz regular A1 + 5oz Heinz Carolina Tangy BBQ Sauce (In lieu of 10oz A-1® Sweet and Tangy Steak sauce, which is no longer sold.) 1 small can tomato sauce, 8oz 1/2 bottle of ketchup, 7oz of ketchup Glaze: 1/3 cup Dark Karo® Syrup 1/2 cup Ketchup 1/4 cup Brown Sugar Instructions: Place ground beef in large bowl. Add chopped onion and bell pepper. Pour in 5oz regular A1, 5oz Heinz Carolina Tangy BBQ Sauce, 7oz of ketchup, 1 small can (8oz) tomato sauce. Beat 2 eggs in cereal bowl and add about 4oz evaporated milk, stir. Pour in meatloaf mixture and mix with hands thoroughly. Add enough crackers to make the mixture stick together. Recipe makes 2 large loaves, so you may split and freeze half. Mold meat into a loaf in a roaster or similar deep dish pan. Bake at 350-375 degrees for about an hour and 15 minutes, or until it appears to be done. You may also drain some of the juice off of the loaf before you top with glaze, but not too much because it will result in a dry meatloaf. Mix glaze ingredients in equal parts or to taste and cover meatloaf with it. Bake uncovered about 10 minutes, to cook the glaze. Slice and serve. Note: Now, Slap ‘yo momma if this meatloaf ain’t the bomb!!!!
